Instructions

Method

-      Boil the chicken, and sit aside to cool; reserve the stock

-      Preheat oven to 350 degrees

-      Cook the rice according to directions (To be served on the side)

-      In a medium size mixing bowl combine the soup, sour cream and chicken stock until smooth

-      Shred the chicken breasts and place in casserole dish

-      Add the soup mixture and stir until thoroughly mixed with the chicken

-      Crush the Ritz crackers and place over the top of the chicken

-      Melt the butter and pour over the top

-      Sprinkle the poppy seeds over the top

-      Place uncovered in oven and cook until it bubbles on the sides

-      Serve over cooked rice and enjoy!

Ingredients
  • 4 chicken breasts (bone in gives better flavor)
  • 1 29 ounce can Cream of Chicken Soup
  • 3 cups chicken stock reserved from cooking the chicken
  • 1 cup sour cream
  • 1 sleeve Ritz crackers
  • 1 stick Butter (not margarine)
  • 1 dash of Poppy seeds
  • 2 cups uncooked rice

where's the lemon? When do you add it and how much.? Also, when do you add the cook rice? Just wondering? Only caught the end of the show!! Love Chef Jeff

I've been enjoying your show for the last two months approximately. I noticed your recipes aren't always consistent with your recipes, such as the one above. You never mentioned "Lemon Poppy Seed Chicken". No Lemon was used that I saw. Plus rice is listed in the recipe - I don't remember seeing that either. I love your show and I'm definitely a novice at cooking. I have always hated cooking, probably due to working full time plus carrying for my two children basically on my own and all responsibilities at home as a lot of working married and single mom's do. My children are all raised now, no longer married and all of a sudden I'm enjoying learning about cooking. I like your recipes and have most ingredients in my kitchen. This past August 2014, I became seriously I'll. I had Acute Renal Failure, then suffered a Heart Attack, my liver enzymes hit the roof and I also developed Cellulitis in both my legs. Needless to say I'm eating more healthy and your show has helped me a lot! Thank you so very much!

Where's the lemon... What happens with the rice? Served on side? Put under chick mixture? I hoped this wouldn't be one of those sites that only gives part of the recipe so the dish doesn't come out quite right...

I am in the mood to make dinners that I used to make years ago, but somehow, let it go when my daughter grew up and I only was cooking for me. I watched the show the other day when you made this lemon poppy seed chicken and it looks wonderful. I am going to make it and then I will let you know how I did.
