The “Dirty Bird” Meat Pie

Savory Black Pepper Dough Ingredients

·      1 ½ cups organic all-purpose flour

·      ¼ teaspoon fine salt

·      3 ounces cubed butter

·      2 teaspoons cracked black pepper

·      1 teaspoon fresh thyme, finely chopped

·      1/3 cup ice cold water

·      1 egg, yolk separated

·      4 tablespoons shredded cheddar cheese

Method

-       In bowl add all purpose organic flour, thyme, salt pepper and whisk together

-       Add cubed butter and use a fork to incorporate into flour

-       Add egg yolk and water to flour mix

-        Using hands mix together to create a dough ball

-       Add a little flour to rolling pin, kitchen and outside of dough ball and with rolling pin roll a 12”x12” sheet of dough

-       Use a 6” biscuit cutter and cut out 4 pie crusts

“Dirty Bird” Pie Filling Ingredients

·      3 tablespoons olive oil

·      2 tablespoons Cajun spice

·      ¼ cup diced onion

·      ¼ cup diced celery

·      ¼ green bell pepper, diced

·      1 pound ground organic chicken

·      2 tablespoons minced garlic

·      ½ cup charred corn

·      ¼ cup chopped flat leaf parsley

·      1 tablespoon Crystal Hot Sauce

·      2 tablespoons diced charred red banana pepper

·      2 tablespoons diced charred yellow banana pepper

·      2 tablespoons diced charred orange banana pepper

·      1 quart vegetable oil for deep frying

Method

-       In a cast iron skillet heat olive oil over medium high-heat

-       Add onion, celery, green bell pepper and sauté for 2 to 3 minutes

-       Add charred red orange yellow banana peppers, charred corn, parsley, two pinches of Cajun spice and cook 2 to 3 minutes

-       Add 3 to 4 tablespoons of pie filling to 4 pie crusts

-       Add water to edges of pie crust and fold each pie crust over to make a semi-circle

-       With end of fork, crimp the edges of meat pies together

-       Lightly brush melted butter to meat pies to create golden crust and add thyme

-       Heat oil for frying in deep fryer to 375 degrees

-       Deep fry half of meat pies until golden brown, 3 to 4 minutes. Drain on paper towels.

-       Bake the remaining meat pies on baking sheet at 350 degrees for 15 to 20 minutes, or until golden brown.

My question is when do you add the chicken and do you cook before you add to the dough. I would be afraid that chicken would not cook if you deep fry.

The instructions do not say when or how long to cook the chicken. It's in the ingredients, but left out of the instructions.
